Background: Gastronomic tourism has emerged as an important component of contemporary tourism development, connecting culinary traditions, cultural identity, local economic activity, and destination competitiveness. In countries possessing extensive historical and cultural resources, traditional cuisine offers opportunities to diversify tourism products, encourage entrepreneurship, strengthen regional identities, and generate additional economic benefits for local communities. Uzbekistan represents a particularly relevant case because its culinary heritage reflects centuries of intercultural exchange, agricultural traditions, craftsmanship, and social practices associated with hospitality. Objective: This study aims to examine the relationship between gastronomic tourism and sustainable socioeconomic development, identify the principal opportunities and challenges associated with the commercialization of culinary heritage, and develop an integrated framework for strengthening gastronomic tourism in Uzbekistan. Methods: The research employs a qualitative analytical approach combining a structured review of international academic literature, documentary analysis of institutional publications, descriptive examination of official tourism statistics, and comparative assessment of regional gastronomic resources. The analytical framework considers cultural authenticity, economic linkages, destination competitiveness, institutional coordination, and environmental sustainability. Results: The analysis identifies five interconnected mechanisms through which gastronomic tourism can contribute to development: tourism product diversification, local value-chain integration, cultural heritage preservation, territorial branding, and employment generation. Official statistics indicate substantial growth in international tourist trips to Uzbekistan, while the international recognition of palov traditions provides an established cultural resource for gastronomic tourism. Nevertheless, insufficient gastronomy-specific statistics, uneven regional infrastructure, limited professional training, and potential commercialization pressures constrain the systematic evaluation and realization of these opportunities. Conclusion: Sustainable gastronomic tourism development requires coordinated destination management, community participation, professional education, digital promotion, responsible resource management, and systematic monitoring. The proposed framework provides a conceptual basis for strengthening the contribution of culinary heritage to regional development while preserving the cultural authenticity of traditional food practices.
